Oven Baked Cranberry Quinoa




I typically cook my quinoa on the stove top, but since I had the oven on already, today I thought I would bake the quinoa instead - that was a good decision! 

This oven baked quinoa is an easy and delicious side dish, and the leftovers make for a tasty and simple quinoa salad the next day, just add some baby spinach and a splash of orange juice or balsamic dressing. 

Here is my recipe for Oven Baked Cranberry Quinoa:



Ingredients:

2 Cups Quinoa
1 tsp Cinnamon
3/4 Cup Dried Cranberries
4 1/2 Cups Water


Method:

In an oven safe baking dish, mix together the quinoa, cinnamon and cranberries.

Add water and stir the quinoa to cover as much of the seeds as possible (some will float to the top and that’s okay).

Place in middle rack of oven and bake for 25 minutes, stir the quinoa and put back in the oven for another 20 minutes to finish baking. (Total cook time: 45 minutes)

Remove from oven and serve.

Enjoy this Cranberry Quinoa warm out of the oven, either on its own, as a side. Store any leftovers in the refrigerator and enjoy cold with a salad the next day.
