Vegan Chocolate Chip Cookies

I wanted to bake something special with the kids today. They have been missing their Daddy, and I felt like a special treat was in order, so I let them decide what we were going to make. I was happy when we all decided on Chocolate Chip Cookies, because there is something about mixing up a simple cookie recipe together with the kids, that puts a smile on everybody’s faces. I’ve made these cookies several times before, so it wasn’t a new recipe I had to figure out measurements for, we just had fun with it. 

I didn’t want to worry about anybody falling off their chair today while working in the kitchen, so after I mopped, we sat on the floor and mixed all the ingredients in bowls while sitting in the middle of the kitchen floor. The kids loved it, and while I had to wash the baking sheets twice because of the little floury feet that stepped on them, it was much less stressful than standing at the counter with two toddlers. Everybody enjoyed themselves, and I have video proof of my preschooler saying “These cookies are amazing”, that goes to show everything tastes *that* much better when it’s made with love… 
These Vegan-friendly Chocolate Chip Cookies are chewy, delicious, and everything a chocolate chip cookie should  be. Here is the recipe:



Ingredients:

1/2 Cup Vegan Margarine
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Tbsp Ground Flax
3 Tbsp Water
1 Cup Whole Wheat Flour
1/2 Cup Oats
1 1/2 tsp Baking Soda
1/2 Cup – 3/4 Cup Chocolate Chips


Method:

Preheat the oven to 350′

In a small bowl, mix together the flax and water. Let sit for 5 – 10 minutes.

In a large bowl, cream together the margarine, brown sugar and sugar. 
In a large bowl, mix together the flour, oats, and baking soda. 
Add the flax water to the bowl with the margarine and sugar, and stir. 
Mix the dry ingredients with the wet ingredients until a smooth dough forms (no dry lumps).
Stir in the chocolate chips. 
Roll the dough into 1″ – 1 1/2″ balls, and place on a parchment lined baking sheet. 
Bake for 10 – 13 minutes, until the bottoms just start to turn golden brown. 
Remove from oven and let cool on baking sheets.
