Spiced Walnut Loaf

Spiced cake is a delicious treat to enjoy on its own or with coffee or tea. The blend of cinnamon, nutmeg, and cloves is reminiscent of autumn and winter, and brings me back to my childhood when my mom would warm cinnamon and cloves on the stove with orange peels in the winter. I love the smells of fall, and the cinnamon walnut flavor of this cake is a perfect treat to enjoy for autumn dessert, or even as a Thanksgiving Dessert (in addition to Pumpkin Pie of course).

Here is the recipe for The Home Baked Vegan’s Spiced Walnut Coffee Cake Loaf:
Ingredients:

1/2 Cup Apple Sauce
1/2 Cup + 1 Tbsp Brown Sugar*
1/4 Cup Maple Syrup
1 Cup Cashew Milk
1 tsp Vanilla
1 1/2 Cups All Purpose Flour
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon
1/4 tsp Ground Cloves
1/4 tsp Ground Nutmeg
1 1/4 Cup Chopped Walnuts*

Method:

Preheat the oven to 350′ 
*In a small bowl, mix together 1 Tbsp brown sugar with 1/2 Cup chopped walnuts. Set aside, you will use this for topping on the loaf before baking. 
In a large bowl, mix together the apple sauce, 1/2 Cup brown sugar, maple syrup, cashew milk, and vanilla. 
In another large bowl, mix together the flour, baking powder, cinnamon, cloves, and nutmeg. 
Mix the dry ingredients into the wet ingredients until combined. 
Stir in 3/4 Cup walnuts.
Pour the batter into a loaf pan. 
Evenly sprinkle the walnut brown sugar mixture on top of the batter. 
Bake for 50 – 60 minutes, or until a skewer inserted into the middle of the cake comes out clean. 
Let cool, remove from pan, and enjoy!
