Vegan Chocolate Cake


Chocolate Cake seems to be my go-to cake to make for birthdays. Every birthday for the last two years, I seem to resort to making this simple chocolate cake, with a different filling and frosting. I have used this recipe to make chocolate cake with orange filling and glaze, simple chocolate cupcakes with vegan buttercream, and most recently, this recipe will be used to make a chocolate cake with raspberry filling and raspberry flavoured vegan buttercream frosting. I guess what I am trying to say is that this cake is so versatile!

Ingredients:
1 1/2 Cup All Purpose Flour
3/4 Cup Cocoa Powder
1 1/2 tsp Baking Powder
1 Cup Sugar
1/2 Cup Brown Sugar
1/2 Cup Vegetable Oil
1/2 Cup Apple Sauce 
1 tsp Vanilla
1 Cup Cashew Milk


Method:

Preheat oven to 350’

In a medium-large bowl, sift together the flour, cocoa powder and baking powder. 

In a separate large mixing bowl, mix together the brown sugar, sugar, and oil.

Add the vanilla, apple sauce, and cashew milk, and mix until combined.

Add the dry ingredients into the wet ingredients, and mix until smooth without any dry lumps.

Pour the batter into a 9” round cake pan.

Bake for 35-40 minutes, or until a skewer inserted into the middle of the cake, comes out clean. 

Let cool, then remove from cake pan and frost.
