Grilled Artichokes

Here is the recipe for The Home Baked Vegan's Grilled Artichokes:



Ingredients:
2 Artichokes
1 Tbsp Olive Oil
1/8 tsp Salt 
1/8 tsp Pepper
Juice from 1/2 Lemon

Method:

Bring a large pot of water to a boil, and prepare the artichokes:

Slice the artichokes into halves, and use a spoon to remove the fuzzy thistles in the middle of the artichoke aka the "choke".

Use kitchen scissors to trim the thorns off the top of the petals.

Cut each half of artichoke in half again, to create four quarters per artichoke (you should have a total of 8 pieces)

Add the artichokes to the boiling water, and boil for 15 - 20 minutes, or until the heart is tender when pierced with a fork. 

Remove the artichokes from the boiling water. Brush with olive oil, and sprinkle with salt and pepper. 

Grill the artichokes on a hot BBQ for approximately 2 minutes on each side. 

Squeeze lemon juice over the artichokes before serving. Enjoy!
