Baked Peanut Sauce Tofu

Peanut Sauce Tofu with Vegetables on Noodles

Baked Peanut Sauce Tofu Recipe

I love baked tofu, I typically marinate it, then bake it dry, but for this recipe, I baked it in it's own marinade to make a delicious baked Peanut Sauce, perfect for serving over noodles or rice. Baked Peanut Sauce Tofu is delicious as a side dish, or in a noodle bowl with fresh vegetables.

Making Baked Peanut Sauce Tofu

I always start out making tofu by pressing it. You can use a tool called a tofu press, or you can place the tofu between several layers of paper towel and press a heavy cookbook or frying pan on top of it. This presses out some of the liquid that it was stored in, and allows the tofu to absorb more flavor from the marinade and ingredients you are cooking with. I like pressing my tofu after I have cut it into cubes, as I feel I get more of the liquid out. The first few times I ever had tofu, it was not pressed or marinated, and it put me off of tofu for a very long time. It wasn't until I had tofu that was pressed, and marinated before cooking, that I actually learned to enjoy tofu.

I use a small casserole dish for this Baked Peanut Sauce Tofu, but any oven-safe baking dish will do, as long as it holds the tofu, and is not too large. For this dish, you want to make sure the tofu is at least mostly submerged in the sauce while it is cooking. This will allow for the most amount of flavor to be absorbed into every bite!

I call this Peanut Sauce Tofu, because it has ingredients much like those which I would use when I make peanut sauce, however the ratio's are much different than what I would use if I were making peanut sauce on it's own. The reason for this is because I want the sauce to be a bit runnier for the tofu to absorb the liquid while it cooks. In a basic peanut sauce I would use a little more peanut butter, and less soy sauce, lime juice and sugar.
