Baked Peanut Sauce Tofu

Baked tofu is fantastic! Typically when I make baked tofu, I marinate it, then bake it on a sheet pan; for this recipe however, I leave the tofu it in it’s own marinade while it bakes to make a delicious baked Peanut Sauce, perfect for serving over noodles or rice. Baked Peanut Sauce Tofu is delicious as a side dish, or in a noodle bowl with fresh vegetables.   

I always start out making tofu by pressing it. There are a couple different ways you can press tofu, the first being with a tofu press. If you don’t have a press, simply place the tofu between several layers of paper towel and press a heavy cookbook or frying pan on top of it. Pressing tofu allows it to absorb more flavor from the marinade and ingredients you are cooking with. I like pressing my tofu after I have cut it into cubes, as I feel I get more of the liquid out.

Baked Peanut Sauce Tofu

I use a small casserole dish for this Baked Peanut Sauce Tofu, but any oven-safe baking dish will do, as long as it holds the tofu, and is not too large. For this dish, you want to make sure the tofu is at least mostly submerged in the sauce while it is cooking. This will allow for the most amount of flavor to be absorbed into every bite!   Peanut Sauce Tofu recipe has ingredients much like those which I would use when making peanut sauce; however the ratio’s are much different than what I would use if I were making peanut sauce on it’s own. The reason for this is because the sauce should be a bit runnier in order for the tofu to absorb the liquid while it cooks.

How to make Baked Peanut Sauce Tofu:

Ingredients:   

1 Block Extra Firm Tofu 

1/4 Cup Soy Sauce

1/4 Cup Brown Sugar 

1/4 Cup Water 

1/4 Cup Peanut Butter 

1 tsp Ginger, grated 

1/4 Cup Lime Juice   

Method:   

Cut the tofu into cubes, then place the tofu on top of several layers of paper towel (or a clean tea towel). Cover with more paper towel and place a heavy cookbook and/or cast iron pan on top. Let sit for 10 minutes.   

Place the tofu in a small-medium sized casserole dish (approximately 1 to 1.5 qts)    Whisk together remaining ingredients, and pour over top of the tofu.   

Marinate it for 1 hour, flipping the tofu pieces over after 30 minutes.   

Preheat the oven to 350° F   

Bake the dish for 30-35 minutes, until the sauce is bubbling.
